3 Irresistible COW Chip Recipes

The holiday season is all about indulgence and creating lasting memories with loved ones. This year, why not add sweet (and salty!) twist to your celebrations with ANNE of Green Gables Chocolates? These three recipes use their delicious COW Chips in ways that you and yours are sure to love.

COW Chips & Pretzel Bark

Kick off your festivities with the perfect blend of sweetness and crunch. COW Chips & Pretzel Bark is a divine treat that combines semi-sweet chocolate, crushed Milk Chocolate COW Chips, pretzels, and a drizzle of homemade caramel. Break into delectable pieces and savor the joy this bark brings to your holiday table.

Ingredients

  • In a large bowl, pour in COW chips and pretzels and crush them until they are in small pieces using your hands or a wooden spoon.
  • Melt the semi-sweet chocolate chips (using a double boiler, or in the micro-wave in 30 second increments). On a parchment lined baking sheet, spread melted chocolate using a silicone or rubber spatula into a 1/4″ thick layer. Don’t spread to the edges.
  • Sprinkle the crushed COW chip and pretzels over the chocolate layer, gently pressing the pieces into the chocolate. Ass some coloured chocolates and if you want to add some holiday flair.
  • Drizzle caramel sauce over the bark, then place in the fridge to set for an hour before breaking into pieces. Enjoy!

No-Bake COW Chips Mini Cheesecakes

Cheesecake is always a favourite, so when we saw this recipe from the ANNE of Green Gables Chocolates website, we knew we had to try it out for ourselves. And how could we not? It’s a classic no bake cheesecake with COW Chips packed into the crust. Whip up these cheesecakes and set in the fridge for a few hours, and you’ll have a crowd-pleaser ready to steal the show.

Ingredients

Filling

  • 1/3  cup melted butter
  • 2 tbsp sugar
  • 1 cup graham cracker crumbs
  • 1 cup of COW Chips (or more… measure with your heart).
  • 2 cups cream cheese, softened.
  • 3/4 cup sugar
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon vanilla
  • pinch of salt
  • 1 cup heavy cream

Directions

  • In a large bowl, crush COW Chips into small pieces (not powder!). Add graham cracker crumbs, sugar, and melted butter and mix until all ingredients are moistened.
  • Using a lined muffin tin, divide the crust evenly and press into the tin (this recipe should yield a minimum of 12 mini cheesecakes). Set aside.
  • In a large bow, mix together softened cream cheese, sugar, lemon juice, vanilla, and salt with a hand mixer on medium until the mixture is creamy.
  • Next, add heavy cream and mix on high until the mixture forms soft peaks (about 3 minutes).
  • Spoon batter evenly on top of crusts. Set in fridge to set for 4-6 hours.
  • Top with more crushed COW Chips and one full chip (if they lasted that long), and enjoy!

Sweet ‘N’ Salty COW Cookies

Are you ready to fall in love with these Sweet ‘N’ Salty COW Chip Cookies by Helen’s Pastry Co? These heavenly treats are loaded with COWS Creamery butter, cocoa powder, and a double dose of COW Chips, all topped off with a luscious caramel drizzle, more COW Chips and a sprinkle of flaky salt. It is the ultimate sweet and salty indulgence will definitely have you reaching for seconds (or thirds)!

Ingredients

Cookies

Caramel Topping

  • 1 cup COWS Creamery Unsalted Butter (room temperature)
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 2/3 cup cocoa powder (sifted)
  • 3/4 tsp baking soda
  • 1/4 tsp table salt
  • 1/2 tsp cinnamon
  • 3 cups milk chocolate COW Chips – slightly crushed (reserve 1 cup and set aside)
  • 1 cup small white chocolate chips
  • 1 cup white sugar
  • 2 tbsp water
  • 1/2 cup heavy cream
  • 1/4 cup COWS Creamery Unsalted Butter (cubed)
  • Drop of vanilla extract
  • Drop of lemon juice
  • Garnish flaky salt

Directions

  • Using a mixer, cream together COWS butter, brown sugar and white sugar in a large bowl until fluffy and light coloured. In a separate bowl combine flour, cocoa powder, and baking soda.
  • Add the eggs, vanilla, cinnamon and salt to the butter and sugar mixture and combine well.
  • Carefully add 1/3 of the dry ingredients to the butter/egg mixture at a time until none is left. Mix on a low setting until well combined. Do not overmix.
  • Keeping a low setting, add in the 2 cups of COW Chips and white chocolate chips until well combined.
  • Using an ice cream scoop, scoop the dough in balls onto a parchment lined baking sheet, leaving space between each one. Press the cookies down lightly to shape them. Chill for in the fridge for 30 minutes.
  • Preheat the oven to 325°F and bake cookies 12-14 minutes until set, but still soft.
  • Cool cookies for 10 minutes. Drizzle with cooled caramel and sprinkle reserved crushed COW Chips (and a few whole ones if you’re feeling fancy!). Garnish with flaky salt and try not to eat them all in one sitting!
Caramel Topping
  • Using a heavy bottom, medium sized pot, pour in the white sugar, water, lemon juice, and vanilla. Heat the sugar mixture on medium-high until it completely melts and caramelizes, keep an eye on it.
  • Once the sugar mixture has reached a deep caramel brown colour, turn off the heat and carefully pour in the cream.
  • Add in your cubed COWS butter and stir until well combined. Set aside to cool.
